The glass display case is what we would consider a meat lover’s paradise.

We’re talking nine flavors of steak tips (the steakhouse marinade is the best seller), filet mignons and N.Y. strips. Add in the cowboy cut (bone-in ribeye), the delmonico (boneless ribeye) and the T-Bone, and the Wine’ing Butcher in Pembroke has got your steak desires covered. It’s also cut fresh every day – and to order – as well as in prepackaged form for those in a hurry.

“What we bring to the community is quality meats. Things you can’t just find anywhere,” said store manager Carrie Drake. “And we’re very conscious of quality and freshness.”

There’s fresh ground burger, as well as patties for those who don’t like forming the red meat circles themselves, to go along with kabobs and sausages, and we can’t forget about the five varieties of marinated chicken and four more in the form of wings. Are you ready to fire up your grill yet?

“We do sell a choice beef and we do all the cutting ourselves,” said meat manager Loren Smith. “We do production all week long to keep things very fresh.”

And since we’ve covered the butcher part of the recently-opened gourmet market’s name, the wine selection must be mentioned next. Racks upon racks of red and whites, from cabernet to chardonnay, to go with any of the delicious meats you decide to bring home. The market also offers items like specialty cheeses, crackers and baked goods, as well as produce, beer and a deli counter. There’s even a refillable olive oil/balsamic vinegar station. We didn’t even know that something like that existed. What will they think of next?

“It’s really a one stop shop,” Drake said. “You can find anything you need to make your dinner.”

But the meat is what the Wine’ing Butcher is all about. Since all the meat comes in fresh and never frozen, the market is getting deliveries all week long and cutting things daily to ensure the highest quality. Although it’s not like some of the butcher shops of yesteryear.

“We are a full service butcher and we do everything on site,” Smith said. “But it’s not like we have a half a cow hanging out back.”

The Wine’ing Butcher opened June 26, replacing the Meat House at the 16 Sheep Davis Road location. It was one of two stores opened this summer for the company that already owns markets in Gilford and Meredith, and another in Ashburn, Va. Taking over in a spot that was previously a butcher has made it an easy transition so far.

“Very, very happy customers,” Drake said. “We want to bring a quality product at a reasonable price.”

And if you can’t find what you’re looking for, just ask.

“If we don’t have it already on hand, we’ll work to get it,” Smith said.

The Wine’ing Butcher is open daily from 9 a.m. to 7 p.m., but if you see the light on, don’t be afraid to stop in.

“If we’re here, we’re open,” Smith said.
